More Muffin Mania!!

Emily and I love to do cooking projects so I was so excited when Our Homeschool Fun posted about her new "In the Kitchen With Mom Linky Carnival." Here are the muffins we created in the kitchen this week!

Oatmeal Raisin Muffins

We are on a Muffin kick in our house and made another batch of muffins for breakfast. These were originally just Oatmeal Muffins, however Emily loves raisins so we added raisins and maple syrup to the batter too!



Emily helped mix the batter.



Emily filled up a muffin tin with batter and then let me finish the rest :0)

Oatmeal Raisin Muffins

  • 1 1/3 cups flour
  • 3/4 cup oats
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 1/4 cup oil
  • 2 tablespoons maple syrup
  • 1 tsp cinnamon
  • 1/4 cup raisins
  1. Mix together the flour, oats, sugar, baking powder, cinammon, raisins and salt and make a well in the center.
  2. In another bowl mix together the milk, egg, oil and maple syrup and then pour it into the dry ingredients.
  3. Mix until just moistened then fill 12 muffin cups with the batter.
  4. Bake for 18 minutes at 400 degrees or until browned and a toothpick comes out clean.

    Oatmeal raisin muffins, bread and cookies are some of my absolute favorites--this is one I will definitely try in our home:-)!!

  3. I have never made oatmeal raisin muffins. We'll definitely try that recipe. We make oatmeal raisin pancakes a lot! (It's a Rachael Ray recipe and so yummy!)
