Muffin Tin Monday

Banana Muffins in our Muffin Tin!!

This week for Muffin Tin Monday there was no theme so we decided to make Banana Muffins for Breakfast in our Muffin Tin. (I had 2 very over ripe bananas that I didn't want to go to waste too!)
Emily filling the muffin tins with the muffin batter.
Emily loves watching them cook in the oven.

All ready for breakfast!!

Emily was very surprised that we were going to use our muffin tin this way...she has never actually seen the originally intended use for a muffin tin.
Really Easy Banana Muffins
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup oil
  • 3/4 cup smashed bananas
  1. Mix together the flour, sugar, baking powder and salt and make a well in the center.
  2. In another bowl mix together the milk, egg, oil and bananas and then pour it into the dry ingredients.
  3. Mix until just moistened then fill 12 muffin cups with the batter.
  4. Bake for 18 minutes at 400 degrees or until browned and a toothpick comes out clean.
We also had a very yummy lunch in our muffin tin too!
Top Row: Pretzels, Black Cherry Jell-O, Emily's Spoon
Bottom Row: Tortellini and Spinach Soup X's 3
Emily's favorite was the Jell-O of course :0)

That's cute...Danielle likes to watch stuff bake in the oven too. She calls all muffin tins "Muffin Tin Monday" even if I bake muffins in them too!

Your MTM lunch looks yummy.

Oooo... muffins. I love them so much! I am not a cake eater, so muffins hold a special place in my heart. I bet she had so much fun with her two muffin tin activities today. :)
